CIBO: Beetroot

Whether grilled or boiled,  you can't really beat the beet for earthy flavor and preventive uses.  A salad with sliced beets,  arugula,  tomatoes,  olive oil,  salt and pepper sounds just about right to me.  Saute its leaves and stems with garlic and olive oil for a spinach-like taste. Beets contain a powerful nutrient called betaine that can be very helpful with a number of blood-related conditions,  especially hypertension.  Just don't be alarmed when your urine turns pink.
